Danish Kringle
Ingredients

* 1 cup butter
* 2 cups sifted all-purpose flour
* 1 cup sour cream
*
* 1 cup butter, softened
* 2 cups brown sugar
* 1 1/2 cups chopped English walnuts, divided
*
* 1 cup confectioners' sugar
* 2 tablespoons water

Directions

1. In a large bowl, cut 1 cup butter into flour until crumbly, leaving pea-sized chunks. Stir in sour cream, and mix well; dough will be very sticky. Form dough into a ball. Cover tightly, and refrigerate 8 hours, or overnight.
2. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking sheet. Prepare the filling by combining 1 cup butter, brown sugar, and 1 cup chopped walnuts.
3. Divide dough into three equal parts; return two parts to the refrigerator to keep cold. Quickly form 1/3 of the dough into a rectangle, and flour lightly. On a heavily floured surface, roll out to approximately 12x17 inches. Position lengthwise on the work surface. Along the long edges of the dough rectangle, use a sharp knife to cut 4 inch long angled lines about 1/2 inch apart. Spoon 1/3 of the filling along the length of the rectangle's uncut center. Alternating from one side of the dough to the other, fold each 1/2 inch wide strip towards the center, crisscrossing the filling in a braid-like fashion. Lightly press together the ends of the strips to seal. Sprinkle with 1/3 of the remaining walnuts. Repeat with remaining ingredients to form 3 braided danishes. Arrange danishes on prepared baking sheet.
4. Bake for 30 minutes in the preheated oven, or until golden brown. Cool for approximately 30 minutes. While the danishes are cooling, prepare the icing: mix confectioners sugar and water until smooth. Drizzle in fine streams over warm danishes.

Red Velvet Cake with Cream Cheese Frosting

    Ingredients
    3/4 cup  all-purpose flour
    3/4 cup  whole-wheat pastry flour
1/4 cup  unsweetened cocoa powder, sifted
    2 teaspoons  baking powder
    1/2 teaspoon  salt
3/4 cup plus 2 tablespoons  sugar
6 tablespoons  cold unsalted butter, cut into chunks (see Cake-Baking Tips)
2   large eggs, at room temperature (see Cake-Baking Tips), separated
    2 teaspoons  vanilla extract
1/2 ounce  red food coloring, (4 teaspoons), optional (see Ingredient note)
    1 cup  nonfat buttermilk
12 ounces  soft light cream cheese
    3/4 cup  confectioners' sugar
    1 1/2 teaspoons  vanilla extract
1/2-1 ounce  chocolate, grated, for garnish (optional)

    Directions
    1. To prepare cake: Preheat oven to 375 degrees F. Coat two 9-inch round cake pans with cooking spray.
    2. Whisk all-purpose flour, whole-wheat flour, cocoa, baking powder and salt in a medium bowl.
    3. Beat sugar and butter in a large bowl with an electric mixer on medium speed until crumbly, about 2 minutes. Beat in egg yolks one at a time, then vanilla and food coloring (if using) until smooth.
    4. Beat in half the buttermilk on low speed until smooth, then half the flour mixture. Scrape down the sides of the bowl, then beat in the remaining buttermilk. Beat in the remaining flour mixture just until combined.
    5. Clean and dry beaters. Beat egg whites in a clean medium bowl at high speed until soft peaks form. With a rubber spatula, gently fold the whites into the batter until just incorporated, using long, even strokes. Divide the batter between the prepared pans, spreading to the edges. Gently rap the pans against the counter once or twice to settle the batter.
    6. Bake until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool on a wire rack for 10 minutes, then invert the layers onto the rack, remove the pans and let cool to room temperature, about 45 minutes more.
    7. To prepare frosting & assemble cake: Beat cream cheese, confectioners' sugar and vanilla in a large bowl with an electric mixer on medium speed until smooth. Place one cake layer top-side down on a serving plate; cover with half the frosting, spreading just to the edges. Set the second layer on top, top-side down. Spread the remaining frosting on the top only. Sprinkle with grated chocolate, if desired.
    Tips:
Cake-Baking Tips: When using cake pans, they must be greased and floured to create a thin layer of protection against the oven's heat. For greater convenience, use a cooking spray that has flour in the mix, such as Pam for Baking, Baker's Joy or Crisco No-Stick Flour Spray.
Whole-wheat pastry flour has less gluten-forming potential than regular whole-wheat flour, making it a better choice for tender baked goods.
To properly measure flour when baking, use a spoon to lightly scoop flour from its container into a measuring cup. Once in the measuring cup, use a knife or other straight edge to level the flour with the top of the cup. If the measuring cup is dipped directly into the container - a common mistake - the flour will be packed into the cup and result in extra flour being added to the recipe, yielding tough, dense baked goods.
Room-temperature butter for a batter is one of the biggest culinary missteps. In fact, butter must be below 68 degrees F to trap air molecules and build structure. Otherwise, the fat will be liquefied and the cake will be flat. To get "cool" butter: Cut refrigerated butter into chunks and let them sit in a bowl for 5 minutes before beating.
Eggs must be at room temperature for the proteins to unwind enough to support the cake's crumb. Either set the eggs out on the counter for 15 minutes or submerge them in their shells in a bowl of lukewarm (not hot) water for 5 minutes.
Although you cannot overbeat the eggs, sugar and butter, you can overbeat the flour. If you do, you'll develop the gluten and create a quick bread rather than a layer cake. Beat the flour just until there are no white grains of undissolved flour visible but not until the batter is smooth.
Ingredient Note: If you prefer not to use food dye, you can omit it completely: just add 4 more teaspoons of buttermilk to the batter (your cake will, however, be more brown than red). Natural food dyes, while less vibrant than conventional dyes, are chemical-, lactose- and gluten-free, but they vary widely in availability. Check for them at your local natural-foods store.

Make the strawberry topping by combining the strawberries, remaining 2 cups sugar, 1/2 cup orange liqueur, and orange zest in a large bowl and tossing to combine. Let sit at room temperature for 15 minutes, stirring occasionally, until all sugar is dissolved. Refrigerate, covered, until ready to assemble the dessert.

Make the whipped cream by combining the heavy cream with the confectioners' sugar in a large bowl and beating with an electric mixer or whisk until slightly thickened. Add the vanilla and continue to beat until the mixture nearly forms stiff peaks.

When ready to assemble the dessert, poke holes all over the cake using a cake tester or toothpick. Drizzle cake with a little orange liqueur. Cut the cake into 1 1/2-inch cubes and place half of the cake cubes on the bottom of a deep-sided dessert bowl. Add half of the strawberry mixture over the top of the cake cubes, juices and all, spreading strawberries evenly with a spatula and allowing the juices to absorb into the cake. Top with the remaining cake cubes and then the remaining strawberries. Top with the whipped cream and serve immediately or refrigerate for up to 1 hour in advance before serving.

    Ingredients

    • Non-stick vegetable spray, for coating the pans
    • 1 1/2 cups cake flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 3/4 cup milk
    • 3 tablespoons unsalted butter
    • 1 tablespoon vanilla extract
    • 1 teaspoon lemon extract
    • 3 large eggs
    • 1 1/4 cups sugar
    • 2 pints fresh strawberries
    • 1 recipe whipped cream frosting

    Whipped Cream Frosting:

    • 1 teaspoon gelatin
    • 2 cups heavy cream
    • 1/2 cup confectioners' sugar
    • 2 teaspoons vanilla extract

    Directions

Preheat oven to 350 degrees with a rack in the middle of the oven. Lightly coat 2 (9-inch) cake pans with nonstick vegetable spray. Line the bottoms with a circle of baking parchment.

Into a large bowl, sift the flour, baking powder and salt together, 3 times. In a small saucepan, bring the milk and butter to a boil. Remove from the heat and add the vanilla and lemon extracts. In separate mixing bowl, beat the eggs and sugar until pale yellow, and fluffy, and doubled in volume. While still beating, drizzle in the hot milk mixture. Fold in the flour mixture. Spread the batter in the prepared pans and bake for 15 minutes, or until golden, the center springs back when lightly pressed, and a cake tester comes out clean. Set the pans on a rack to cool. Run the tip of a knife around the edges of the cakes to loosen them, and turn them out of the pans.

Whipped Cream Frosting: In a medium bowl, mix together the gelatin and 1/4 cup of the cream. Let rest for 5 minutes to soften, then place the bowl over barely simmering water until the gelatin has completely dissolved. Remove the bowl from the heat and let cool to tepid. In the meantime, in a mixing bowl, whip the cream until slightly thickened. Add the confectioners' sugar and vanilla and whip to the consistency of shaving cream. Fold 1/2 cup of the whipped cream into the gelatin mixture, then fold in the rest.

Wash and dry the strawberries. Pick out the 12 best. Stem and slice the rest. Lay the sliced berries over 1 cake, then spread a 1/2-inch layer of whipped cream on top. Place the second cake over the first. Frost the entire cake with the remaining whipped cream. Top with the 12 whole berries.

    For the shortcakes:

    • 1 cup all-purpose flour, plus more for dusting
    • 1/3 cup granulated sugar
    • 2 tablespoons Dutch-process cocoa powder
    • 3/4 teaspoon baking powder
    • 1/4 teaspoon salt
    • 4 tablespoons cold unsalted butter, cut into pieces
    • 3 ounces milk chocolate, roughly chopped
    • 2 large eggs
    • 1/4 cup heavy cream
    • 1 teaspoon vanilla extract
    • Raw or turbinado sugar, for sprinkling

    For the toppings:

    • 1 quart strawberries, hulled and halved or quartered if large (about 3 cups) if large
    • 1/4 cup granulated sugar
    • 1 cup heavy cream

    Directions

Position a rack in the middle of the oven; preheat to 400 degrees. Line a baking sheet with parchment paper. Make the shortcakes: Whisk the flour, granulated sugar, cocoa powder, baking powder and salt in a large bowl. Using your fingers, rub the butter into the flour mixture until sandy. Add the chocolate. Whisk 1 egg, the cream and vanilla in a glass measuring cup; stir into the flour mixture with a fork to make a shaggy dough (there will be some dry bits).      Sponge Cake Shortcakes

Picture of Sponge Cake Shortcakes Recipe Ingredients

    • 1 pint strawberries or blueberries
    • 1 lemon
    • 6 tablespoons superfine sugar
    • 2 cups heavy cream
    • 3 tablespoons brandy
    • 12 sponge cake shells

    Directions

Cut the stems off the strawberries. Wash under cold water, then drain and pat dry with paper towel. Grate the rind of the lemon onto a small plate and set it aside. Cut the lemon in half and juice it into a medium bowl, using 1 hand to catch any falling seeds. Cut the strawberries into slices and add to the bowl along with 3 tablespoons sugar. Toss until the sugar has dissolved. Do this at least 1 hour (or up to 4 hours) before you serve them so that the berries get nice and juicy. Refrigerate them.

In a large mixing bowl, beat the cream and remaining sugar with a good-size whisk or an electric mixer until the cream starts to thicken. Add the brandy and lemon zest, and keep beating until the whipped cream holds little soft peaks. You can whip the cream up to 1 hour before you serve the shortcakes. Keep it refrigerated.

Just before serving the shortcakes, add the berries and their juice to the bowl of whipped cream. Stir them together gently until the berries are distributed throughout the cream. The whipped cream will get soft and a little runny, which is exactly what you want. Set a shortcake shell in the center of each plate and spoon the berry cream over it.

    Very Strawberry Shortcake

Ingredients       Picture of Very Strawberry Shortcake Recipe

    • 2 pounds fresh strawberries, washed, patted dry, hulled, and quartered
    • 1/2 cup sugar
    • 2 tablespoons water
    • 1 teaspoon grated orange zest
    • Totally-from-Scratch Biscuits, recipe follows
    • 1 1/2 cups Real Whipped Cream (you'll need to make 1 1/2 batches), recipe follows

    Directions

Position rack in center of oven and preheat the oven to 475 degrees F.
Macerate the strawberries by combining the strawberries, 1/2 cup of the sugar, water, and orange zest in a large bowl. Stir well to combine.
Cover with plastic wrap and refrigerate until the strawberries have softened and given up their juices and mixture is chilled, about 1 hour.
While the strawberries are chilling, make the Totally-from-Scratch Biscuits.
When the biscuits are done, using oven mitts or pot holders, remove them from the oven and transfer to wire racks to cool. The shortcakes can be served warm or at room temperature.
To assemble the shortcakes: Using a knife or fork, split the biscuits in half horizontally and place the bottom halves on each of 8 plates.
Spoon 1/2 cup of the macerated strawberries on each bottom half. Top each serving with 3 tablespoons of Real Whipped Cream. Lean a biscuit top against each bottom and serve.

    Totally From Scratch Biscuits:

    1 1/4 cups self-rising flour
    3/4 cup cake flour
    1 tablespoon sugar
    3/4 teaspoon baking powder
    1/2 teaspoon salt
    1/8 teaspoon baking soda
4 tablespoons (1/2 stick) cold unsalted butter, plus 2 tablespoons melted butter
    1 1/4 cups heavy cream
    1/4 cup all-purpose flour
    1 tablespoon sugar
Position rack in center of oven and preheat the oven to 475 degrees F.
Sift the self-rising flour, cake flour, sugar, baking powder, salt, and baking soda into a medium mixing bowl.
Using your fingers or a pastry cutter, work the cold butter into the flour until there are no butter pieces larger than a pea.
Add the heavy cream to the flour mixture and, using your hands or a rubber spatula, stir just until the cream and flour come together to form a dough. Do not overmix!
Sprinkle some of the all-purpose flour on a flat surface and place the dough on top of the flour. Using your hands, press the dough into a 1/2-inch thick disk about 8 inches in diameter.
Using a 3-inch round cutter dipped in flour, cut the dough into circles. Be sure to press straight downward when cutting the dough – a twisting motion will prevent the dough from rising. You will need to re-form the scraps of dough in order to make 8 biscuits. Do this by gathering the scrap pieces together and pressing, re-form into a 1/2-inch thick disk, then cut as many additional biscuits as possible from the re-formed dough.
Place the biscuits on a small baking sheet and use a pastry brush to brush the tops with the melted butter. Sprinkle with the sugar.
Bake in the oven for 10 to 12 minutes, or until golden brown.
Using oven mitts or pot holders, remove the biscuits from the oven and allow to cool briefly and serve while still warm.

    Real Whipped Cream:

1/2 cup heavy cream, well chilled
    1 tablespoon confectioners' sugar
    1/4 teaspoon vanilla extract
Place a mixing bowl and the beaters from your electric mixer in the freezer or refrigerator until well chilled, about 15 minutes.
Combine the heavy cream, confectioners' sugar, and vanilla extract in the mixing bowl.
With an electric mixer on low speed, begin beating the cream, gradually increasing the speed to high as cream thickens. (Do this slowly, or the cream will splatter all over!)
Beat until the cream forms soft peaks. Test to see if it is ready by turning off the mixer and lifting the beaters out of the cream – if the cream makes soft peaks that topple over slightly, then it's done. Be careful not to overwhip, or the cream will separate and begin to taste like butter.
Serve immediately or cover with plastic wrap and refrigerate for up to 2 hours.

    • 2/3 cup warm milk (110 degrees F/45 degrees C)
    • 1 large egg
    • 1/3 cup white sugar
    • 1/2 tablespoon salt
    • 1/3 cup butter, softened
    • 2 1/2 cups bread flour
    • 1/3 cup currants
    • 1/3 cup sultana raisins
    • 1/3 cup red candied cherries, quartered
    • 2/3 cup diced candied citron
    • 6 ounces marzipan
    • 1 tablespoon confectioners' sugar
    • 1 teaspoon ground cinnamon

    Directions

    1. In a small bowl, dissolve yeast in warm milk. Let stand until creamy, about 10 minutes.
    2. In a large bowl, combine the yeast mixture with the egg, white sugar, salt, butter, and 2 cups bread flour; beat well. Add the remaining flour, 1/4 cup at a time, stirring well after each addition. When the dough has begun to pull together, turn it out onto a lightly floured surface, and knead in the currants, raisins, dried cherries, and citrus peel. Continue kneading until smooth, about 8 minutes.
    3. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
    4. Lightly grease a cookie sheet. Deflate the dough and turn it out onto a lightly floured surface. Roll the marzipan into a rope and place it in the center of the dough. Fold the dough over to cover it; pinch the seams together to seal. Place the loaf, seam side down, on the prepared baking sheet. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
    5. Bake in the preheated oven for 10 minutes, then reduce heat to 300 degrees F (150 degrees C), and bake for a further 30 to 40 minutes, or until golden brown. Allow loaf to cool on a wire rack. Dust the cooled loaf with confectioners' sugar, and sprinkle with the cinnamon

    Gingerbread Houses

    Planning and Building
    Here are supplies you'll need:
      • The pattern
      • Gingerbread dough: double the recipe
      • Rolling pin
      • Cookie sheets
      • Aluminum foil
      • Plywood base or heavy cardboard, doubled to support the house
      • Royal icing, recipe doubled
      • Pastry bags and decorating tips
      • Butter knife, palette knife or flat sandwich spreader
      • A damp cloth for quick clean-ups
      • Glue gun (optional)

    Helpful tips:
    • Allow a weekend to complete the house
    • Have all supplies ready
    • Read all instructions before you begin: you will need to double the gingerbread recipe to have enough dough
    • Allow the gingerbread to cool thoroughly before assembling
    • Make icing ahead of time
    • Keep icing covered with a clean damp cloth (touching icing) and plastic wrap at all times to prevent it from drying out
    • Adjust the consistency of the icing by adding more egg whites if the icing is too dry or more powdered sugar if it is too wet. It should be thick and stiff.
    • Prepare the base for your house by covering plywood or heavy cardboard with several layers of foil
    • Use canned goods from the pantry to stabilize the walls during assembly; remove them before adding the roof

    The house that Jack built
Visualize the "yard." Will you have a walkway? Trees? A fence? Set the house at an angle for a pleasing presentation.
When assembling, apply a generous amount of icing to one side of the joint and press an un-iced side to the edge and hold until set. (See step-by-step articles for more photos.)
Apply icing-glue to the bottom of your pieces for more stability; adhere them to the foil/plywood base.
Allow 30 minutes for the front, side walls and back of house to dry and firmly set before adding the roof.
You'll need an extra pair of hands when adding and securing the roof.
Allow house to dry completely before decorating: a minimum of 4 hours, preferably overnight.

    Problems?

Don't worry; you'll be able to fill gaps and cover errors later with more icing and decorations.
A fool-proof assembly method, if you're not going to eat the gingerbread, is to use a glue gun. Use icing to finish the look.
Icing can be kept at room temperature overnight. Be sure it is well-covered with a damp cloth and plastic wrap.

    Polenta-Blueberry Cakes
    Polenta-Blueberry Cakes
    Helpful tips
    • Have a plan for decorating. Think about how you want your house to look and what candy should go where.
    • Have candy and decorating supplies ready.
    • Save time and make accessory items ahead of time: snowmen, trees, carts, candles and fences can be made while you're waiting for the house to dry.
    • Apply candy decorations by putting a small dab of icing to the underside of the candy and hold it in place until set.
    • Use extra dough scraps for decorative cut-outs.
    • Keep the tip of your pastry bag covered with a damp cloth in between decorating to prevent hardening.
    • Use tweezers to adhere small items to the house.
    • You may need super glue to adhere top-heavy items, like lamp posts.

    Storage

Help your house survive the nibbles of your children!
    • Moisture is a decorated cookie's worst enemy: display the house in a cool dry place.
    • Cover at night to seal out moisture and dust; lightly drape a clean trash bag over the house and base.
    • Gingerbread houses can last up to a year, if you choose not to eat them. Spray with a clear lacquer for maximum protection.
    • Cover with a plastic bag and store in a box with some Styrofoam “peanuts” to protect house from damage.

    Turkey Brine

    Ingredients

    • 1 gallon vegetable broth
    • 1 cup sea salt
    • 1 tablespoon crushed dried rosemary
    • 1 tablespoon dried sage
    • 1 tablespoon dried thyme
    • 1 tablespoon dried savory
    • 1 gallon ice water

    Directions

    1. In a large stock pot, combine the vegetable broth, sea salt, rosemary, sage, thyme, and savory. Bring to a boil, stirring frequently to be sure salt is dissolved. Remove from heat, and let cool to room temperature.
    2. When the broth mixture is cool, pour it into a clean 5 gallon bucket. Stir in the ice water.
    3. Wash and dry your turkey. Make sure you have removed the innards. Place the turkey, breast down, into the brine. Make sure that the cavity gets filled. Place the bucket in the refrigerator overnight.
    4. Remove the turkey carefully draining off the excess brine and pat dry. Discard excess brine.
    5. Cook the turkey as desired reserving the drippings for gravy. Keep in mind that brined turkeys cook 20 to 30 minutes faster so watch the temperature gauge
