Red Velvet Cake with Cream Cheese Frosting

Ingredients
3/4 cup  all-purpose flour
3/4 cup  whole-wheat pastry flour
1/4 cup  unsweetened cocoa powder, sifted
2 teaspoons  baking powder
1/2 teaspoon  salt
3/4 cup plus 2 tablespoons  sugar
6 tablespoons  cold unsalted butter, cut into chunks (see Cake-Baking Tips)
2   large eggs, at room temperature (see Cake-Baking Tips), separated
2 teaspoons  vanilla extract
1/2 ounce  red food coloring, (4 teaspoons), optional (see Ingredient note)
1 cup  nonfat buttermilk
12 ounces  soft light cream cheese
3/4 cup  confectioners' sugar
1 1/2 teaspoons  vanilla extract
1/2-1 ounce  chocolate, grated, for garnish (optional)

Directions
1. To prepare cake: Preheat oven to 375 degrees F. Coat two 9-inch round cake pans with cooking spray.
2. Whisk all-purpose flour, whole-wheat flour, cocoa, baking powder and salt in a medium bowl.
3. Beat sugar and butter in a large bowl with an electric mixer on medium speed until crumbly, about 2 minutes. Beat in egg yolks one at a time, then vanilla and food coloring (if using) until smooth.
4. Beat in half the buttermilk on low speed until smooth, then half the flour mixture. Scrape down the sides of the bowl, then beat in the remaining buttermilk. Beat in the remaining flour mixture just until combined.
5. Clean and dry beaters. Beat egg whites in a clean medium bowl at high speed until soft peaks form. With a rubber spatula, gently fold the whites into the batter until just incorporated, using long, even strokes. Divide the batter between the prepared pans, spreading to the edges. Gently rap the pans against the counter once or twice to settle the batter.
6. Bake until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool on a wire rack for 10 minutes, then invert the layers onto the rack, remove the pans and let cool to room temperature, about 45 minutes more.
7. To prepare frosting & assemble cake: Beat cream cheese, confectioners' sugar and vanilla in a large bowl with an electric mixer on medium speed until smooth. Place one cake layer top-side down on a serving plate; cover with half the frosting, spreading just to the edges. Set the second layer on top, top-side down. Spread the remaining frosting on the top only. Sprinkle with grated chocolate, if desired.
Tips:
Cake-Baking Tips: When using cake pans, they must be greased and floured to create a thin layer of protection against the oven's heat. For greater convenience, use a cooking spray that has flour in the mix, such as Pam for Baking, Baker's Joy or Crisco No-Stick Flour Spray.
Whole-wheat pastry flour has less gluten-forming potential than regular whole-wheat flour, making it a better choice for tender baked goods.
To properly measure flour when baking, use a spoon to lightly scoop flour from its container into a measuring cup. Once in the measuring cup, use a knife or other straight edge to level the flour with the top of the cup. If the measuring cup is dipped directly into the container - a common mistake - the flour will be packed into the cup and result in extra flour being added to the recipe, yielding tough, dense baked goods.
Room-temperature butter for a batter is one of the biggest culinary missteps. In fact, butter must be below 68 degrees F to trap air molecules and build structure. Otherwise, the fat will be liquefied and the cake will be flat. To get "cool" butter: Cut refrigerated butter into chunks and let them sit in a bowl for 5 minutes before beating.
Eggs must be at room temperature for the proteins to unwind enough to support the cake's crumb. Either set the eggs out on the counter for 15 minutes or submerge them in their shells in a bowl of lukewarm (not hot) water for 5 minutes.
Although you cannot overbeat the eggs, sugar and butter, you can overbeat the flour. If you do, you'll develop the gluten and create a quick bread rather than a layer cake. Beat the flour just until there are no white grains of undissolved flour visible but not until the batter is smooth.
Ingredient Note: If you prefer not to use food dye, you can omit it completely: just add 4 more teaspoons of buttermilk to the batter (your cake will, however, be more brown than red). Natural food dyes, while less vibrant than conventional dyes, are chemical-, lactose- and gluten-free, but they vary widely in availability. Check for them at your local natural-foods store.

Strawberry Shortcake

           Picture of Strawberry Shortcake RecipeIngredients

  • 1 cup (2 sticks) unsalted butter, melted and slightly cooled, plus 2 teaspoons, softened
  • 6 large eggs, at room temperature
  • 2 tablespoons milk, at room temperature
  • 3 1/3 cups granulated sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 pounds strawberries, rinsed, hulled, and sliced
  • 1/2 cup orange-flavored liqueur, plus a little more for drizzling (recommended: Grand Marnier)
  • 1 1/2 teaspoons orange zest
  • 2 1/2 cups heavy cream
  • 5 tablespoons confectioners' sugar
  • 1 1/2 teaspoons vanilla extract

Directions

Preheat the oven to 375 degrees F and grease a 9 by 13-inch glass casserole with the 2 teaspoons of butter and set aside.

Combine the eggs and milk in a large bowl and beat with an electric mixer until frothy. Add 1 1/3 cups of the sugar and continue to beat at high speed until the mixture is quite thick and pale yellow, about 7 to 10 minutes.

Sift together the flour, baking powder, and salt in a medium bowl. Fold this mixture gently into the egg mixture. Gently stir in the melted butter and then transfer the batter to the prepared baking pan and bake in the center of the oven until risen and golden brown, about 30 minutes. Remove from the oven and let cool on a wire rack before proceeding.

Make the strawberry topping by combining the strawberries, remaining 2 cups sugar, 1/2 cup orange liqueur, and orange zest in a large bowl and tossing to combine. Let sit at room temperature for 15 minutes, stirring occasionally, until all sugar is dissolved. Refrigerate, covered, until ready to assemble the dessert.

Make the whipped cream by combining the heavy cream with the confectioners' sugar in a large bowl and beating with an electric mixer or whisk until slightly thickened. Add the vanilla and continue to beat until the mixture nearly forms stiff peaks.

When ready to assemble the dessert, poke holes all over the cake using a cake tester or toothpick. Drizzle cake with a little orange liqueur. Cut the cake into 1 1/2-inch cubes and place half of the cake cubes on the bottom of a deep-sided dessert bowl. Add half of the strawberry mixture over the top of the cake cubes, juices and all, spreading strawberries evenly with a spatula and allowing the juices to absorb into the cake. Top with the remaining cake cubes and then the remaining strawberries. Top with the whipped cream and serve immediately or refrigerate for up to 1 hour in advance before serving.

Using a mixer, beat the heavy cream, sugar, vanilla, and lemon zest until soft peaks form, about 1 1/2 to 2 minutes.

Diner-Style Strawberry Shortcake

Picture of Diner-Style Strawberry Shortcake Recipe

Ingredients

  • Non-stick vegetable spray, for coating the pans
  • 1 1/2 cups cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 3 tablespoons unsalted butter
  • 1 tablespoon vanilla extract
  • 1 teaspoon lemon extract
  • 3 large eggs
  • 1 1/4 cups sugar
  • 2 pints fresh strawberries
  • 1 recipe whipped cream frosting

Whipped Cream Frosting:

  • 1 teaspoon gelatin
  • 2 cups heavy cream
  • 1/2 cup confectioners' sugar
  • 2 teaspoons vanilla extract

Directions

Preheat oven to 350 degrees with a rack in the middle of the oven. Lightly coat 2 (9-inch) cake pans with nonstick vegetable spray. Line the bottoms with a circle of baking parchment.

Into a large bowl, sift the flour, baking powder and salt together, 3 times. In a small saucepan, bring the milk and butter to a boil. Remove from the heat and add the vanilla and lemon extracts. In separate mixing bowl, beat the eggs and sugar until pale yellow, and fluffy, and doubled in volume. While still beating, drizzle in the hot milk mixture. Fold in the flour mixture. Spread the batter in the prepared pans and bake for 15 minutes, or until golden, the center springs back when lightly pressed, and a cake tester comes out clean. Set the pans on a rack to cool. Run the tip of a knife around the edges of the cakes to loosen them, and turn them out of the pans.

Whipped Cream Frosting: In a medium bowl, mix together the gelatin and 1/4 cup of the cream. Let rest for 5 minutes to soften, then place the bowl over barely simmering water until the gelatin has completely dissolved. Remove the bowl from the heat and let cool to tepid. In the meantime, in a mixing bowl, whip the cream until slightly thickened. Add the confectioners' sugar and vanilla and whip to the consistency of shaving cream. Fold 1/2 cup of the whipped cream into the gelatin mixture, then fold in the rest.

Wash and dry the strawberries. Pick out the 12 best. Stem and slice the rest. Lay the sliced berries over 1 cake, then spread a 1/2-inch layer of whipped cream on top. Place the second cake over the first. Frost the entire cake with the remaining whipped cream. Top with the 12 whole berries.

Chocolate Strawberry Shortcakes

IngredientsPicture of Chocolate Strawberry Shortcakes Recipe

For the shortcakes:

  • 1 cup all-purpose flour, plus more for dusting
  • 1/3 cup granulated sugar
  • 2 tablespoons Dutch-process cocoa powder
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons cold unsalted butter, cut into pieces

  • Raw or turbinado sugar, for sprinkling

For the toppings:

  • 1 quart strawberries, hulled and halved or quartered if large (about 3 cups) if large
  • 1/4 cup granulated sugar
  • 1 cup heavy cream

Directions

Position a rack in the middle of the oven; preheat to 400 degrees. Line a baking sheet with parchment paper. Make the shortcakes: Whisk the flour, granulated sugar, cocoa powder, baking powder and salt in a large bowl. Using your fingers, rub the butter into the flour mixture until sandy. Add the chocolate. Whisk 1 egg, the cream and vanilla in a glass measuring cup; stir into the flour mixture with a fork to make a shaggy dough (there will be some dry bits). Turn out onto a lightly floured surface; pat flat until 1 1/2 inches thick. Cut into 6 rounds with a knife or cookie cutter, using the scraps for the last cake.

Place the rounds on the baking sheet; freeze for 20 minutes. Beat the remaining egg; brush onto the cakes and sprinkle with raw sugar. Bake until firm, about 20 minutes. Transfer to a rack to cool.

Meanwhile, make the toppings: Toss half of the strawberries with half of the sugar in a bowl; set aside. Place the other half of each in a saucepan; cook over medium-low heat, mashing with a fork to make a thick puree, about 10 minutes. Cool completely. Whip the cream with a mixer until medium peaks form; swirl in the strawberry puree.

Split the shortcakes in half. Layer some of the strawberry cream and reserved fruit on the bottoms; cover with the shortcake tops. Finish with more strawberry cream and the remaining berries.

 Sponge Cake Shortcakes

Picture of Sponge Cake Shortcakes Recipe Ingredients

  • 1 pint strawberries or blueberries
  • 1 lemon
  • 6 tablespoons superfine sugar
  • 2 cups heavy cream
  • 3 tablespoons brandy
  • 12 sponge cake shells

Directions

Cut the stems off the strawberries. Wash under cold water, then drain and pat dry with paper towel. Grate the rind of the lemon onto a small plate and set it aside. Cut the lemon in half and juice it into a medium bowl, using 1 hand to catch any falling seeds. Cut the strawberries into slices and add to the bowl along with 3 tablespoons sugar. Toss until the sugar has dissolved. Do this at least 1 hour (or up to 4 hours) before you serve them so that the berries get nice and juicy. Refrigerate them.

In a large mixing bowl, beat the cream and remaining sugar with a good-size whisk or an electric mixer until the cream starts to thicken. Add the brandy and lemon zest, and keep beating until the whipped cream holds little soft peaks. You can whip the cream up to 1 hour before you serve the shortcakes. Keep it refrigerated.

Just before serving the shortcakes, add the berries and their juice to the bowl of whipped cream. Stir them together gently until the berries are distributed throughout the cream. The whipped cream will get soft and a little runny, which is exactly what you want. Set a shortcake shell in the center of each plate and spoon the berry cream over it.

Very Strawberry Shortcake

Ingredients       Picture of Very Strawberry Shortcake Recipe

  • 2 pounds fresh strawberries, washed, patted dry, hulled, and quartered
  • 1/2 cup sugar
  • 2 tablespoons water
  • 1 teaspoon grated orange zest
  • Totally-from-Scratch Biscuits, recipe follows
  • 1 1/2 cups Real Whipped Cream (you'll need to make 1 1/2 batches), recipe follows

Directions

Position rack in center of oven and preheat the oven to 475 degrees F.
Macerate the strawberries by combining the strawberries, 1/2 cup of the sugar, water, and orange zest in a large bowl. Stir well to combine.
Cover with plastic wrap and refrigerate until the strawberries have softened and given up their juices and mixture is chilled, about 1 hour.
While the strawberries are chilling, make the Totally-from-Scratch Biscuits.
When the biscuits are done, using oven mitts or pot holders, remove them from the oven and transfer to wire racks to cool. The shortcakes can be served warm or at room temperature.
To assemble the shortcakes: Using a knife or fork, split the biscuits in half horizontally and place the bottom halves on each of 8 plates.
Spoon 1/2 cup of the macerated strawberries on each bottom half. Top each serving with 3 tablespoons of Real Whipped Cream. Lean a biscuit top against each bottom and serve.

Totally From Scratch Biscuits:

1 1/4 cups self-rising flour
3/4 cup cake flour
1 tablespoon sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon baking soda
4 tablespoons (1/2 stick) cold unsalted butter, plus 2 tablespoons melted butter
1 1/4 cups heavy cream
1/4 cup all-purpose flour
1 tablespoon sugar
Position rack in center of oven and preheat the oven to 475 degrees F.
Sift the self-rising flour, cake flour, sugar, baking powder, salt, and baking soda into a medium mixing bowl.
Using your fingers or a pastry cutter, work the cold butter into the flour until there are no butter pieces larger than a pea.
Add the heavy cream to the flour mixture and, using your hands or a rubber spatula, stir just until the cream and flour come together to form a dough. Do not overmix!
Sprinkle some of the all-purpose flour on a flat surface and place the dough on top of the flour. Using your hands, press the dough into a 1/2-inch thick disk about 8 inches in diameter.
Using a 3-inch round cutter dipped in flour, cut the dough into circles. Be sure to press straight downward when cutting the dough – a twisting motion will prevent the dough from rising. You will need to re-form the scraps of dough in order to make 8 biscuits. Do this by gathering the scrap pieces together and pressing, re-form into a 1/2-inch thick disk, then cut as many additional biscuits as possible from the re-formed dough.
Place the biscuits on a small baking sheet and use a pastry brush to brush the tops with the melted butter. Sprinkle with the sugar.
Bake in the oven for 10 to 12 minutes, or until golden brown.
Using oven mitts or pot holders, remove the biscuits from the oven and allow to cool briefly and serve while still warm.

Real Whipped Cream:

1/2 cup heavy cream, well chilled
1 tablespoon confectioners' sugar
1/4 teaspoon vanilla extract
Place a mixing bowl and the beaters from your electric mixer in the freezer or refrigerator until well chilled, about 15 minutes.
Combine the heavy cream, confectioners' sugar, and vanilla extract in the mixing bowl.
With an electric mixer on low speed, begin beating the cream, gradually increasing the speed to high as cream thickens. (Do this slowly, or the cream will splatter all over!)
Beat until the cream forms soft peaks. Test to see if it is ready by turning off the mixer and lifting the beaters out of the cream – if the cream makes soft peaks that topple over slightly, then it's done. Be careful not to overwhip, or the cream will separate and begin to taste like butter.
Serve immediately or cover with plastic wrap and refrigerate for up to 2 hours.

Orange-Scented Shortcakes with a Fresh Berry Medley

Picture of Orange-Scented Shortcakes with a Fresh Berry Medley Recipe Ingredients

  • 2 pounds assorted fresh berries, washed and patted dry, such as strawberries, raspberries, blackberries and blueberries (strawberries hulled and sliced)
  • 3/4 cup plus 2 tablespoons sugar
  • 2 tablespoons water
  • 2 1/2 teaspoons grated orange zest
  • 1 1/4 cups self-rising flour
  • 3/4 cup cake flour
  • 2 tablespoons sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon baking soda
  • 4 tablespoons (1/2 stick) cold unsalted butter, plus 2 tablespoons melted butter
  • 1 1/4 cups heavy cream
  • 1/4 cup all-purpose flour
  • 1 1/2 cups lightly sweetened whipped cream, for serving
  • Mint sprigs, for garnishing

Directions

In a large bowl combine the berries, 3/4 cup of the sugar, water, and 1 teaspoon of the orange zest in a large bowl. Stir well to combine. Cover with plastic wrap and refrigerate until the berries have softened and given up their juices and mixture is chilled, about 1 hour.
Position rack in center of oven and preheat the oven to 475 degrees F.

Sift the self-rising flour, cake flour, 1 tablespoon of the sugar, baking powder, salt, and baking soda into a medium mixing bowl. Add the butter and remaining orange zest to the flour mixture and, using your fingers or a pastry cutter, work the cold butter into the flour until there are no butter pieces larger than a pea.

You will need to re-form the scraps of dough in order to make 8 shortcakes. Do this by gathering the scrap pieces together and pressing to re-form into a 1/2-inch thick disk, then cut as many additional shortcakes as possible from the re-formed dough.

Place the shortcakes on a small baking sheet and use a pastry brush to brush the tops with the melted butter. Sprinkle the tops of the shortcakes with the remaining tablespoon of sugar and bake in the oven for 10 to 12 minutes, or until golden brown.
Remove the shortcakes from the oven and transfer to a wire rack to cool. The shortcakes can be served warm or at room temperature.
To assemble the shortcakes: Using a knife or fork, split the shortcakes in half horizontally and place the bottom halves on each of 8 plates.

Divide the berries evenly among the bottom halves and top each serving with a dollop of whipped cream. Lean a shortcake top against each bottom and serve, garnished with a sprig of mint

Christmas Stollen

Ingredients

 Christmas Stollen Recipe

  • 1 tablespoon active dry yeast
  • 2/3 cup warm milk (110 degrees F/45 degrees C)
  • 1 large egg
  • 1/3 cup white sugar
  • 1/2 tablespoon salt
  • 1/3 cup butter, softened
  • 2 1/2 cups bread flour
  • 1/3 cup currants
  • 1/3 cup sultana raisins
  • 1/3 cup red candied cherries, quartered
  • 2/3 cup diced candied citron
  • 6 ounces marzipan
  • 1 tablespoon confectioners' sugar
  • 1 teaspoon ground cinnamon

Directions

  1. In a small bowl, dissolve yeast in warm milk. Let stand until creamy, about 10 minutes.
  2. In a large bowl, combine the yeast mixture with the egg, white sugar, salt, butter, and 2 cups bread flour; beat well. Add the remaining flour, 1/4 cup at a time, stirring well after each addition. When the dough has begun to pull together, turn it out onto a lightly floured surface, and knead in the currants, raisins, dried cherries, and citrus peel. Continue kneading until smooth, about 8 minutes.
  3. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  4. Lightly grease a cookie sheet. Deflate the dough and turn it out onto a lightly floured surface. Roll the marzipan into a rope and place it in the center of the dough. Fold the dough over to cover it; pinch the seams together to seal. Place the loaf, seam side down, on the prepared baking sheet. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  5. Bake in the preheated oven for 10 minutes, then reduce heat to 300 degrees F (150 degrees C), and bake for a further 30 to 40 minutes, or until golden brown. Allow loaf to cool on a wire rack. Dust the cooled loaf with confectioners' sugar, and sprinkle with the cinnamon

Gingerbread Houses

Planning and Building
Here are supplies you'll need:
    • The pattern
    • Gingerbread dough: double the recipe
    • Rolling pin
    • Cookie sheets
    • Aluminum foil
    • Plywood base or heavy cardboard, doubled to support the house
    • Royal icing, recipe doubled
    • Pastry bags and decorating tips
    • Butter knife, palette knife or flat sandwich spreader
    • A damp cloth for quick clean-ups
    • Glue gun (optional)

Helpful tips:
  • Allow a weekend to complete the house
  • Have all supplies ready
  • Read all instructions before you begin: you will need to double the gingerbread recipe to have enough dough
  • Allow the gingerbread to cool thoroughly before assembling
  • Make icing ahead of time
  • Keep icing covered with a clean damp cloth (touching icing) and plastic wrap at all times to prevent it from drying out
  • Adjust the consistency of the icing by adding more egg whites if the icing is too dry or more powdered sugar if it is too wet. It should be thick and stiff.
  • Prepare the base for your house by covering plywood or heavy cardboard with several layers of foil
  • Use canned goods from the pantry to stabilize the walls during assembly; remove them before adding the roof

The house that Jack built
Visualize the "yard." Will you have a walkway? Trees? A fence? Set the house at an angle for a pleasing presentation.
When assembling, apply a generous amount of icing to one side of the joint and press an un-iced side to the edge and hold until set. (See step-by-step articles for more photos.)
Apply icing-glue to the bottom of your pieces for more stability; adhere them to the foil/plywood base.
Allow 30 minutes for the front, side walls and back of house to dry and firmly set before adding the roof.
You'll need an extra pair of hands when adding and securing the roof.
Allow house to dry completely before decorating: a minimum of 4 hours, preferably overnight.

Problems?

Don't worry; you'll be able to fill gaps and cover errors later with more icing and decorations.
A fool-proof assembly method, if you're not going to eat the gingerbread, is to use a glue gun. Use icing to finish the look.
Icing can be kept at room temperature overnight. Be sure it is well-covered with a damp cloth and plastic wrap.

Polenta-Blueberry Cakes
Polenta-Blueberry Cakes
Helpful tips
  • Have a plan for decorating. Think about how you want your house to look and what candy should go where.
  • Have candy and decorating supplies ready.
  • Save time and make accessory items ahead of time: snowmen, trees, carts, candles and fences can be made while you're waiting for the house to dry.
  • Apply candy decorations by putting a small dab of icing to the underside of the candy and hold it in place until set.
  • Use extra dough scraps for decorative cut-outs.
  • Keep the tip of your pastry bag covered with a damp cloth in between decorating to prevent hardening.
  • Use tweezers to adhere small items to the house.
  • You may need super glue to adhere top-heavy items, like lamp posts.

Storage

Help your house survive the nibbles of your children!
  • Moisture is a decorated cookie's worst enemy: display the house in a cool dry place.
  • Cover at night to seal out moisture and dust; lightly drape a clean trash bag over the house and base.
  • Gingerbread houses can last up to a year, if you choose not to eat them. Spray with a clear lacquer for maximum protection.
  • Cover with a plastic bag and store in a box with some Styrofoam “peanuts” to protect house from damage.

  • 1 tablespoon dried thyme
  • 1 tablespoon dried savory
  • 1 gallon ice water

Directions

  1. In a large stock pot, combine the vegetable broth, sea salt, rosemary, sage, thyme, and savory. Bring to a boil, stirring frequently to be sure salt is dissolved. Remove from heat, and let cool to room temperature.
  2. When the broth mixture is cool, pour it into a clean 5 gallon bucket. Stir in the ice water.
  3. Wash and dry your turkey. Make sure you have removed the innards. Place the turkey, breast down, into the brine. Make sure that the cavity gets filled. Place the bucket in the refrigerator overnight.
  4. Remove the turkey carefully draining off the excess brine and pat dry. Discard excess brine.
  5. Cook the turkey as desired reserving the drippings for gravy. Keep in mind that brined turkeys cook 20 to 30 minutes faster so watch the temperature gauge

Grilled Turkey Tacos with Coffee Mole

ngredients

- 4 pasilla chilies, dried - 4 guajillo chilies, dried - 3 new mexico chilies, dried - 1 medium onion - 2-3 cloves garlic - 1/4 cup raw peanuts - 1/4 cup almonds - 1/4 cup pumpkin seeds - 1 full pot Mexican coffee - 1 quart chicken broth - 1.5 pounds turkey breast - corn tortillas - 1/4 head of cabbage - Queso Fresco or other soft cheese

Step 1

Grilled Turkey Tacos with Coffee Mole recipe picture 1

- 1 2-3cm stick cinnamon - 1 Tablespoon cumin - 1 2-3 teaspoons coriander - 1 star anise pod, more or less (six sections here)
1

Step 2

Pico de Gallo garnish: - 1 pasilla chile, fresh - 1 anaheim chile, fresh - 3-4 jalapeno chilies, fresh - 2-4 serrano chilies, fresh - 2-3 tomatoes - 1/2 large onion - juice of 3-5 key limes (or 1-2 regular limes) - salt to taste
2

Step 3

Grilled Turkey Tacos with Coffee Mole recipe picture 3
Please note that to be truly authentic and have the best possible results, only LARD should be used in the frying steps of this recipe. I decided my cholesterol was already bad enough thanks to the slabs of bacon from the second course, so I elected to put a Spanish spin on the preparation and use olive oil instead. As with most great recipes, this one begins with deep frying everything. Take special care, however: dried chiles take just a few seconds of frying to reach doneness. Fry them for too long and they burn, rendering (heh lard joke) the whole dish overwhelmingly bitter and unpleasant. Be VERY attentive when doing this. Start by heating up a fryer full of your oil of choice. Cut the top off each chile, open them up, and remove all of the seeds. If necessary, excise the ribs of the chile as well - this will also make the finished product less spicy.
3

Step 4

Grilled Turkey Tacos with Coffee Mole recipe picture
Individually fry each chile very briefly. The flesh will lighten slightly and the whole thing will curl up.
4

Step 5

Grilled Turkey Tacos with Coffee Mole recipe picture
Drain each chile and place it in a bowl with its fellows. Once all the chilies are fried, pour on your whole pot of Mexican coffee. If you're going to rehydrate the chilies, you might as well do it with the theme ingredient! Soak the chilies while you fry the rest of the ingredients.
5

Step 6

Grilled Turkey Tacos with Coffee Mole recipe picture
Fry the nuts and pumpkin seeds individually until light to medium brown. Be careful with the pumpkin seeds, they have a tendency to pop when dropped into hot oil.
6

Step 7

Grilled Turkey Tacos with Coffee Mole recipe picture
Put a generous amount of your fat of choice into a small saute pan. Chop the onions roughly and add them to the oil. Saute over medium-high heat until they become translucent. Roughly chop the garlic and add that to the onions. Get everything nicely browned and remove from heat.
7

Step 8

Grilled Turkey Tacos with Coffee Mole recipe picture
Toast the spices in a dry pan until you can smell their wonderful essential oils. (Note: this should probably be done in a generous portion of lard as well to be truly authentic. Your choice.
8

Step 9

Grilled Turkey Tacos with Coffee Mole recipe picture
Now take your spices, onions, garlic, nuts, and pumpkin seeds and put them all into a food processor. Make sure it's not a wimpy one, either, as you'll be asking a lot of it today. Just look at all that glistening, fatty goodness. Pull some chilies out of the soak and add them to the processor as well. Don't make it too full, though - I'd recommend slightly less full than in the picture.
9

Step 10

Grilled Turkey Tacos with Coffee Mole recipe picture
Now, whirl the everliving heck out of those ingredients. Let it spin for longer than you think it needs, as long as you can stand the noise. The result will be a somewhat-smooth, very thick paste.
10

Step 11

Grilled Turkey Tacos with Coffee Mole recipe picture
Using a ladle, take up some of the coffee-chile liquor formed by steeping your chiles for so long. Add to the food processor a little at a time, running between additions to loosen and further smooth the paste.
11

Step 12

Grilled Turkey Tacos with Coffee Mole recipe picture
Once the paste is nicely smooth, with a slight grainy appearance, pour it into a saucepan. You may need to do the chiles in a second batch if your processor is small like mine. Add chicken broth sufficient to make the mole into a reasonably thin sauce.
12

Step 13

Grilled Turkey Tacos with Coffee Mole recipe picture
Put over low heat and boil for a long, long. LONG time. We're talking four or five hours minimally, mostly uncovered, adding broth as necessary to keep the mixture from solidifying entirely. Good mole is quite thick, almost un-pourable. Good mole also cooks all day or even overnight, so the longer you can give it the better. The end result will be significantly reduced in volume and darker in color. If your mole looks a bit chunky like that one, I suggest letting it cool slightly and giving it another pass in the food processor. It should have a slightly grainy appearance, but be smooth on the tongue. About 30 minutes before serving, prepare the pico de gallo. Finely dice the tomatoes, onion, jalapenos, and pasilla. Cut the serranos into rounds, or half-rounds if you prefer to remove the seeds. Combine all ingredients with enough lime juice to moisten and salt to taste.
13

Step 14

Cook the turkey breast in your preferred manner. I chose to grill it. Rest a few minutes, then cut into 1cm slices.
14

Step 15

Grilled Turkey Tacos with Coffee Mole recipe picture
Put 2-3 slices of turkey onto a couple of tortillas. Top liberally with mole and queso fresco.
15

Step 16

Thinly slice the cabbage.

You could also add the red food coloring at this stage, or you could add it later like I did. Pour the melted chocolate onto the flour mixture and stir to combine into a very solid ball. Add the egg mixture and work it into the dough until you have a unified mass.

Mix with a fork until the dough starts to clump into similarly-sized pieces.
2

Step 3

Homemade Pasta with Alfredo Sauce recipe picture 3

Get your hands in there and work that dough until it comes together. If you started light on the buttermilk you'll probably need to add a bit more to bring everything together.
3

Step 4

Homemade Pasta with Alfredo Sauce recipe picture

Peanut Butter Gelatin

2 envelopes unflavored gelatin
3/4 cup peanut butter
2 cups water
1/4 teaspoon salt
2 teaspoons sugar

Macerated Strawberries

1 pound strawberries
1/4 cup sugar

Candied Barley

3/4 cup pearl barley
3 cups water
5 Tablespoons sugar
1 Tablespoon butter, room temperature
1/4 teaspoon vanilla extract

Peanut Butter Gelatin: Bloom the gelatin in 1/2 cup water.
2

Step 3

Step 5

Add the peanut butter solution to the bloomed gelatin and stir vigorously until the gelatin is completely dissolved.
5

Step 6

Pour into a small baking pan to approx. 1cm depth and chill.
6

Step 7

Inside Out Peanut Butter and Jelly Sandwich recipe picture
Macerated Strawberries: Slice the strawberries as desired and mix with the sugar. Stir occasionally for 15-20 minutes, then chill until serving time. The strawberries will release more juice as time goes on.
7

Step 8

Inside Out Peanut Butter and Jelly Sandwich recipe picture
Candied Barley: Cook the barley in a rice cooker or over the stove. Typical stovetop cooking time is around 45 minutes to an hour. Once the barley is cooked (but preferably still warm), put the sugar into a saute pan over medium-high heat. Shake frequently, and begin stirring as the sugar liquefies. Once it browns a bit, add the butter and stir until the butter has melted and the caramel is fully liquid. Add the vanilla extract and stir to combine.
8

Step 9

Inside Out Peanut Butter and Jelly Sandwich recipe picture
Add the still-warm barley. Reduce heat to medium-low and cook, stirring frequently. The caramel is likely to seize up into chunks when the barley is added, but dedicated stirring and cooking will cause it to relax and coat each grain of barley. Once most of the caramel has applied itself to the barley, move to a baking sheet. If you let this cool, it will get somewhat soggy. For that reason I recommend assembling the dessert immediately after candying the barley. If you need to do this in advance, a quick refresh in a hot pan will restore some of the crunch (but also dry out the barley somewhat).
9

Step 10

Inside Out Peanut Butter and Jelly Sandwich recipe picture
Assembly: Unmold the peanut butter gelatin (hot water over the bottom of the pan helps with this) and cut out small rounds with whatever round-thing-cutting apparatus you have.
10

Step 11

Inside Out Peanut Butter and Jelly Sandwich recipe picture
Plate, beginning with gelatin, then a nice layer of still-warm barley, then the second layer of gelatin. Top and garnish with macerated strawberries. The barley will melt a bit of the gelatin, leaving the inside of the dessert soft and gooey while the outside remains nicely firm. Crunchy bits of caramel stuck to the barley adds another textural contrast.

Sourdough Focaccia

Ingredients

Ingredients Part 1: Buttermilk Starter
1 cup water
1/4 cup buttermilk
1.5 cups flour
1 tablespoon sugar

Get this rolling 3-5 days in advance, as you'll need a big happy colony of bacteria come baking time.

See below for additional ingredients that you will need.

1

Sourdough Focaccia recipe picture 1
Combine all ingredients in a 1 quart or larger jar. Mix thoroughly, put in a warm part of your kitchen and ignore.
1

Step 2

Sourdough Focaccia recipe picture 2
As time goes on, fermentation will begin. This starter got an odd yellowish scum on top of it, but underneath it was definitely working.
2

Step 3

Sourdough Focaccia recipe picture 3
At this stage you have what is known by some cooks as a mother. If you intend to keep the mother, you must feed the mother regularly. If you intend to use the mother only once, it will live up to a week without feeding. Some people advocate a cycle of nearly starving the mother followed by several feedings, to toughen up the bacteria and provide a resilient and vigorous mother.
3

Step 4

Sourdough Focaccia recipe picture
Ingredients Part 2: Buttermilk Sourdough Stage 1, Proofing: 1 cup active mother 1/2 cup flour 1/2 cup warm water 1 teaspoon sugar Stage 2, Expanding: 3 cups flour 2 cups water Stage 3, Bread making: 1.25 cups cold buttermilk 4 cups flour 2 teaspoons salt Additional buttermilk and flour as necessary to attain desired consistency Method Stage 1, Proofing Combine all Stage 1 ingredients in your favorite mixing bowl. Cover and leave at room temperature for 12 hours. In the end your colony should be happily (but slowly) bubbling.
4

Step 5

Sourdough Focaccia recipe picture
Stage 2, Expanding This stage is about providing our bacteria with a larger playground and getting the population really rolling. Combine all ingredients with the results of Stage 1. Cover and leave at room temperature overnight (8+ hours). If all goes well you will be greeted in the morning with a much more energetic and happy fermentation:
5

Step 6

Sourdough Focaccia recipe picture
Stage 3, bread making Having finally built up a nice supply of our culture, we are ready to start making actual bread. Add the Stage 3 ingredients and mix until the dough comes together into a cohesive mass. Knead by hand for 15 minutes, until the dough is smooth (but probably still a bit sticky).
6

Step 7

Sourdough Focaccia recipe picture
Cover with a moist cloth and let rise for 3-4 hours.
7

Step 8

Sourdough Focaccia recipe picture
Beat this down and roll/stretch/whatever it into your baking vessel. Let that rise in a warm (~100 degrees F) oven for 1-2 hours.
8

Step 9

Sourdough Focaccia recipe picture
Meanwhile, let's consider toppings. Toppings 8 small shallots 8 serrano chiles Some form of aged goat cheese Midnight Moon, the cheese I'm using here, is very rich and has a strong floral/honey component to it. This made it an excellent complement to the sour notes in the bread.
9

Step 10

Sourdough Focaccia recipe picture
Mince and/or thinly slice the shallots.
10

Step 11

Sourdough Focaccia recipe picture

And serranos, removing as much or as little of the chiles' hearts as you like to control heat.
11

Step 12

Sourdough Focaccia recipe picture

Slowly caramelize the vegetables in a pan (somehow I missed photographing this even though it took a half hour). Distribute over the top of the focaccia before baking, finishing with micro-planed goat cheese.

Step 13

Bake in a 375 degree Fahrenheit oven 30-40 minutes or until done. Serve in wedges with butter if desired.

Fauxstachio Soy Nut Ice Cream

Ingredients

  • 2 cups Soymilk (Plain - not flavored)
  • 4 eggs
  • 1 teaspoon corn starch
  • 1 cup powdered sugar
  • 1/2 - 1 teaspoon vanilla extract (omitted in mine because the soymilk was already vanilla flavored)
  • edamame (roated and salted)
  • 1/4 teaspoon salt
  • 2-3 drops green food coloring (optional)

Step 1

Fauxstachio Soy Nut Ice Cream recipe picture 1
Start by separating your eggs. Yolks go in a bowl, whites have no application in this recipe so save them for a meringue or something.
1

Step 2

Fauxstachio Soy Nut Ice Cream recipe picture 2
Pour the powdered sugar and corn starch over the yolks.
2

Step 3

Fauxstachio Soy Nut Ice Cream recipe picture 3
And whisk to combine. This may take considerable muscle power (or a hand-held blender) as the yolks will be somewhat reluctant to absorb all that sugar. Perseverance will be rewarded.
3

Step 4

Fauxstachio Soy Nut Ice Cream recipe picture
Put the soy milk and salt in a medium saucepan and heat until steaming hot (but not quite boiling).
4

Step 5

Fauxstachio Soy Nut Ice Cream recipe picture
As the milk heats, consider a suitable platform for your bowl of egg yolks. It will be considerably agitated and you may not have a hand free to hold it, so you might want to put a towel down as a sort of "foot" for the bowl.
5

Step 6

Fauxstachio Soy Nut Ice Cream recipe picture
Place the bowl on top of this, whisk at the ready.
6

Step 7

Fauxstachio Soy Nut Ice Cream recipe picture
Once the soy milk is hot, take a smallish ladle and scoop some up.
7

Step 8

Fauxstachio Soy Nut Ice Cream recipe picture
Start beating your yolk mixture. DO NOT add the hot milk to the yolks before you start whisking or you will end up with scrambled eggs. Slowly, carefully drizzle the milk into the yolks, whisking as you go. Slowly add more hot milk until you've added about half of it to the yolk mixture. Congratulations! You have just tempered your custard, allowing the egg yolks to reach a high temperature without curdling. (Sorry for no action shots, but again, this isn't something I can do and photo at the same time.)
8

Step 9

Fauxstachio Soy Nut Ice Cream recipe picture
Pour the tempered egg mixture into the saucepan with the remaining milk. Return it to low heat, stirring constantly, until it reaches desired thickness. What is desired thickness, you ask? Consult your friendly neighborhood spatula! Run your finger horizontally through whatever sticks to the spatula. If you get a continuous line through the material with no drooping or dripping, you're there.
9

Step 10

Fauxstachio Soy Nut Ice Cream recipe picture
Pour your custard into a wide pan and put it in the fridge to chill. This would also be the time to add vanilla extract if you need/want to.
10

Step 11

Fauxstachio Soy Nut Ice Cream recipe picture
This gives us time to prepare the chunky bits. Pour some (how many is really up to taste) roasted edamame into a plastic bag and put it on something non-fragile. Terminate with moderate prejudice. Don't go hog-wild with the beat stick, because doing so will result in teeny tiny bits of nut instead of nice-sized chunks. Just crush, don't maim, kill, or destroy.
11

Step 12

Fauxstachio Soy Nut Ice Cream recipe picture
Pour them out of the bag.
12

Step 13

Fauxstachio Soy Nut Ice Cream recipe picture
Go through the rubble. You are looking for the inner meat of the "bean," seen on the right. Remove and dispose of the hull, seen on the left. These are relatively tasty, but their texture is not conducive to ice cream enjoyment.
13

Step 14

Fauxstachio Soy Nut Ice Cream recipe picture
Set aside the "nut" fragments for later use.
14

Step 15

With luck, your ice cream base will have cooled by now. If so, fire up your ice cream machine and start it churning. Add the food coloring now if you choose to use it.
15

Step 16

(If you lack an ice cream machine, you can freeze it mostly-solid in the flat pan, then put it through a food processor and finish freezing for a similar consistency. Add the nuts after processing if you take this course.) This mixture is somewhat hesitant to freeze; it took about 15 minutes before it even started thickening. Once it does start to thicken, toss in your dried edamame bits. Once the ice cream machine/food processor has done its work, freeze at least an hour before serving.
